The set of field paths to update. Mutable fields: "active", "display_name".

Note: setting active to false archives the tax rate. Archival is one-way — an archived rate cannot be reactivated. Existing invoice references continue to function (drafts recompute against the archived rate; finalized invoices already snapshot their amounts).

Required. If empty, no fields are updated.
